Why do many muffin recipes turn muffins out like hockey pucks?

You may be overmixing the batter. Once the wet and dry ingredients are combined, muffins must be just barely mixed to moisten, then baked immediately. Over-mixing makes the gluten tough.

i dont ever follow the complete recipe.. go by them but add more butter or milk or things like that make em your own.. or ask perkins how they make theirs heheWhy do many muffin recipes turn muffins out like hockey pucks?
Tough muffins got that way because you probably beat the dough rather than folded it over and over. It needs to be treated gently. Next time, don't beat or whip the batter. Fold the ingredients together gently. And, the batter should be lumpy. If you beat or mix it enough to get rid of all the lumps, it'll be tough.
because most muffin recipes bite! I realized that they probably dont even test some of them out... What you need to do is find a good PLAIN muffin recipe, and then add to it what you want- like blueberries or choc chip- that way you know it will turn out awesome every time : )
