Any really scrummy muffin recipes?

here are 3 and i saved the best for last


Cinnamon Streusel Crumble Muffin





Muffin:





1/2 cup butter (melted)


3/4 cup flour


3/4 cup wheat flour


3/4 cup brown sugar


1 teaspoon baking soda


2 teaspoons cinnamon


1/2 teaspoon salt


1 cup applesauce


1 egg


Topping:





1/2 cup brown sugar


1/2 cup chopped nuts


1/4 cup flour


1/4 cup butter


Directions:





Heat over to 350 degrees. Grease and flour a 9 inch pan. Mix all muffin ingredients and pour batter into muffin cups in pan. Mix topping ingredients with a fork and sprinkle over top. Bake 20-25 minutes; test with a toothpick to make sure batter is cooked. Remove from pan and serve warm.





Chocolate Chip Muffins





6 squares (1 oz.) semi-sweet chocolate


1/3 cup butter


3/4 cup buttermilk


1/2 cup white sugar


1 egg


1 1/2 teaspoons vanilla extract


1 2/3 cups all purpose flour


1 teaspoon baking soda


1/2 teaspoon salt


1 cup mini semi-sweet chocolate chips


Directions:





Preheat the over to 400 degrees. In a small sauce pan over low heat, melt the semi-sweet chocolate together with the butter. Let stand until cool, about 10 minutes. Lightly beat the egg. In a small bowl stir together the chocolate-butter mixture with the buttermilk, sugar, egg, and vanilla until blended well. In a large bowl, stir together flour, soda, and salt. Make a hole in the center of the dry ingredients, pour in the chocolate mixture, and stir until just combined. Stir in the mini chocolate chips. Spoon the batter into the lined muffin cups. Bake at 400 degrees for 20-25 minutes or until a toothpick comes out clean. Remove the muffins and serve warm or cooled.





Pineapple Macadamia Nut Muffins





1 cube butter


1 cup dark brown sugar


28 pineapple pieces, fresh or canned (about 1 cup)


1 1/4 cup coarsely chopped macadamia nuts


1 1/2 cup unbleached all-purpose flour


1/2 cup firmly packed dark brown sugar


2 teaspoons baking soda


1 1/2 teaspoons grated orange peel


1 teaspoon salt


1/2 cup skim milk


1/2 cup butter, melted and cooled slightly


2 eggs, beaten


Instructions:





Preheat oven to 375 degrees. Melt butter on stove or in microwave until bubbly. Add brown sugar and cook until sugar and butter are well combined. Divide mixture evenly between muffin cups. Place 4 pineapple pieces in butter/sugar mixture in the bottom of each muffin cup and sprinkle 1 Tbsp. coarsely chopped nuts over the pineapple. In large mixing bowl combine dry ingredients. In separate bowl beat the eggs together with melted butter and milk. Mix wet and dry ingredients until just combined. Divide batter evenly between muffin cups on top of pineapple and macadamia nuts. Bake for 25 minutes or until toothpick comes out clean. Remove muffins and allow them to cool on rack, serve upside down.Any really scrummy muffin recipes?
Chocolate Chip Muffins:

12 muffins





1 3/4 cups all-purpose flour


1/2 cup whole wheat flour


2 1/2 teaspoons baking powder


1 banana, mashed and ripe (approximately 1/2 cup)


1/2 cup brown sugar, packed


2 eggs


1 cup milk


1/3 cup butter, melted


1 cup chocolate chips





1. Preheat oven to 400 degrees F.


2. Butter 12 large muffin pans well or line with paper muffin cups.


3. Sift together flours, and baking powder.


4. Reserve. Combine banana with brown sugar until smooth.


5. Beat in eggs, milk and melted butter.


6. Stir in dry ingredients only until blended.


7. Quickly stir in chocolate chips.


8. Do not overbeat. Spoon mixture into prepared muffin cups.


9. (An ice cream scoop works well for this). Bake 25 minutes or until browned slightly.


10. Cool on racks.


11. Preparation time - 15 minutes Cooking Time - 25 minutes Yield - 12 large muffins


12. I substituted 1/3 cup canola oil instead of butter.


13. The banana and chocolate chips give the muffin a nice flavour and it's not overly sweet. Tastes almost healthy :-)
i love banana muffin and i found this on the net and have done it 5 or 6 times they go so fast








3 ripe bananas, mashed


1 stick of margarine


1 cup sugar


2 eggs


2 cups flour


1 teaspoon baking soda


dash of salt


1 teaspoon of vanilla








Preparation:


Beat the margarine and sugar in an electric mixer until light and creamy. Add the eggs, flour, soda, salt and vanilla till smooth. Mix in the mashed bananas. You can also add a cup of chopped chocolate, pecans or walnuts.


Bake at 350 degrees in a greased and floured loaf pan or cup-cake pans. Makes 2 loaves (bake about 1 hour) or 5 dozen mini muffins (bake 18 minutes). The loaves are done when cake tester inserted into the loaf comes out clean and the loaves are a golden brown.


Baking time will vary depending on your oven.
Add 8 oz of scrummy to a basic muffin mix, cook till golden brown. ;-)





White chocolate and macadamia muffins:





2 cups (300g) self-raising flour


鈪?cup (150g) caster sugar


戮 cup (140g) white Choc Bits


陆 cup (75g) coarsely chopped macadamias, toasted


60g butter, melted


戮 cup (180ml) milk


1 egg, beaten lightly





Preheat oven to moderately hot 200-210潞C / 400-425潞F / Gas Mark 5





Grease a six-hole (180ml) muffin pan [smaller pan if you prefer 9 or 12 muffins]





Combine ingredients in a large bowl, mix well. Spoon mixture into prepared pan. Bake for about 25 minutes.





Chocolate honeycomb muffins:





2 cups (300g) self-raising flour


录 cup (55g) caster sugar


1 cup (190g) white Choc Bits


100g chocolate coated honeycomb, chopped coarsely


1 egg, beaten lightly


60g butter, melted


1 cup (250ml) buttermilk


录 cup (90g) honey


1 teaspoon vanilla essence





Preheat oven to moderately hot: [as above]





Grease 12-hole (80ml) muffin pan





Combine flour, sugar, Choc Bits and honeycomb in a large bowl, stir in combined remaining ingredients. Spoon mixture into prepared pan. Bake in oven for about 20 minutes.
