Banana Chocolate Chip Muffins!


They are so delicious!!! :)





3 bananas


1 stick butter


1 cup sugar


2 eggs


2 cups flour


1 tsp baking soda


1/4 tsp salt





Preheat oven to 350 degrees





Beat the bananas, then add the softened butter, then sugar. Add the eggs (one at a time, mixing well in between), flour, baking soda, and salt. *Side note...I add each individually and mix well in between.* Mix all together well. Fold in half a bag of mini chocolate chips.





Line muffin tin with paper cups and fill 3/4 of the way up. For for 15 to 20 minutes.





This recipe yields about 6 dozen mini muffins, and I'm not entirely sure how many regular sized muffins.

Here are a few choice muffin recipes. You didn't say what you had on hand, but you can vary muffin recipes a bit with substitutions. Now that I've looked at these, I think I have everything for the Chocolate Ricotta Muffins..... mmmmmm








Chocolate Ricotta Muffins





Ingredients:





2 1/3 cups flour


1 cup sugar


3/4 cup semisweet chocolate chips


1/3 cup cocoa


2 teaspoons baking powder


3/4 teaspoon salt


1 cup ricotta cheese


2 large eggs, lightly beaten


1 1/3 cups milk


1 teaspoon vanilla


1/4 cup canola oil


Cooking spray





Preparation:





Preheat oven to 350 degrees. Spray 录 cup muffin tins with cooking spray. In a large bowl, mix flour, sugar, chips, cocoa, baking powder and salt.





In a medium bowl mix cheese with eggs, one at a time, beating well after each addition. Whisk in milk and vanilla until blended. Fold cheese mixture and oil into flour mixture until just blended. Spoon batter into muffin cups.





Bake 25 minutes or until wooden pick inserted in center comes out clean. Remove from pans immediately and cool on a wire rack. Yield: 18 servings








Fresh Strawberry Muffins





Ingredients:





1/2 cup butter, softened


3/4 cup sugar


1 egg


2 cups all-purpose flour


2 teaspoons baking powder


1/2 teaspoon salt


1/2 cup milk


1/2 teaspoon vanilla


1 1/2 cups chopped strawberries


3 teaspoons sugar


1/2 teaspoon cinnamon





Preparation:





Cream butter and sugar. Add egg, beat well. Sift flour, baking powder and salt. Add flour mixture and milk alternately to butter mixture. Add vanilla. Gently stir in strawberries. Spoon batter into muffin pans. Combine sugar and cinnamon. Sprinkle over batter. Bake at 400掳F for 20-25 minutes. Yield: 1 dozen








Mocha Walnut Muffins





Ingredients:





1 1/2 cups all-purpose flour


1 1/4 cups whole wheat flour


1 cup packed brown sugar


1/3 cup unsweetened cocoa powder


1 teaspoon baking soda


1/2 teaspoon baking powder


1 cup buttermilk or plain yogurt


3/4 cup vegetable oil


1/2 cup very strong black coffee


3 large eggs


1 teaspoon vanilla extract


1 cup chopped walnuts


1 cup semisweet chocolate chips





Preparation:





Preheat oven to 375掳F. Lightly grease 18 regular-sized muffin cups, or line with paper or foil baking cups.





Mix flours, sugar, cocoa, baking soda, salt and baking powder. In a large bowl, whisk buttermilk, oil, coffee, eggs and vanilla until blended. Stir flour mixture into buttermilk mixture just until blended. Stir in walnuts and chocolate chips. Spoon batter into prepared muffin cups.





Bake 20-25 minutes, until toothpick inserted near centers comes out clean. Remove muffins to wire rack to cool. Serves 18.








Pecan Muffins





Ingredients:





1/2 cup pecan or walnut oil


2/3 cup whole milk


1 large egg plus 1 large yolk


3/4 teaspoon pure vanilla extract


1 1/2 cups all-purpose flour


1/2 cup sugar


1 1/2 teaspoons baking powder


3/4 teaspoon salt


1 cup coarsely chopped pecans or walnuts (1/4 lb), toasted





Preparation:





Preheat oven to 350?F with rack in middle. Generously butter 9 muffin cups.





Whisk together oil, milk, egg plus yolk, and vanilla in a large bowl.





Whisk together flour, sugar, baking powder, and salt in another bowl, then whisk into milk mixture until just combined. Stir in nuts, then fill buttered muffin cups half full with batter.





Bake until golden and a wooden pick comes out clean, 20 to 25 minutes. Cool in pan on a rack 15 minutes.

1 Tbsp baking powder


1/2 teaspoon baking soda


1/2 teaspoon salt





10 Tbsp unsalted butter (1 1/4 stick), softened


1 cup sugar


2 large eggs


1 1/2 cup plain yogurt


1 teaspoon grated lemon peel





1 1/2 cups blueberries


1 Tbsp flour (if using defrosted frozen berries)


Method





1 Adjust the oven rack to the middle-lower part of the oven. Preheat oven to 375掳F.





2 Whisk together the flour, baking powder, baking soda, and salt and set aside.





3 In a large mixing bowl, cream butter and sugar together, beating until fluffy. Add eggs one at a time, beating until incorporated after each one. Beat in the grated lemon peel.





4 Beat in one half of the dry ingredients until just incorporated. Beat in one third of the yogurt. Beat in half of the remaining dry ingredients. Beat in a second third of the yogurt. Beat in the remaining dry ingredients and then the remaining yogurt. Again be careful to beat until just incorporated. Do not over beat. Fold in the berries. If you are using frozen berries, defrost them first, drain the excess liquid, and then coat them in a light dusting of flour.





5 Use a standard 12-muffin muffin pan. Coat each muffin cup lightly with olive oil or grapeseed oil using a pastry brush, or with a little butter. Or use one of those convenient vegetable oil sprays. Distribute the muffin dough equally among the cups. Bake until muffins are golden brown, about 25 to 30 minutes. Test with a long toothpick (we use a thin bamboo skewer) to make sure the center of the muffins are done. Set on wire rack to cool for 5 minutes. Remove muffins from the tin and serve slightly warm.

PUMPKIN MUFFINS


3 1/3 c. flour


2 tsp. baking soda


3 c. sugar


1 1/2 tsp. salt


1 tsp. cinnamon


1 tsp. nutmeg


1/4 tsp. ground ginger





Mix dry ingredients and add:





1 c. oil


4 eggs


2/3 c. water


2 c. pumpkin


Preheat oven to 350F degrees.


Prepare muffin tins by greasing with vegetable oil or butter and sprinkling lightly with flour. Shake out excess.


Fill muffin tins three-quarters full and bake at 350 degrees for 20-30 minutes or until toothpick inserted in center comes out clean.


Frost with Orange Icing or Cream Cheese Frosting.





RAISIN OATMEAL MUFFINS


1 cup quick cooking oats


1 cup buttermilk


1 egg


1/2 cup brown sugar, packed


1/2 cup melted butter or vegetable oil


1 cup sifted flour


1 teaspoon baking powder


1/2 teaspoon baking soda


1/2 teaspoon salt


1/2 to 3/4 cup raisins, craisins or currants


Preheat oven to 400掳F degrees.


Note: If buttermilk is not on hand, 1/2 cup milk and 1/2 cup sour cream or yogurt may be substituted. Try different flavors of yogurt for new flavor variations!


Pour the buttermilk (or other liquid) over oatmeal and allow to soak while mixing the dry ingredients. Add egg and sugar to the oatmeal mixture and combine well.


Note: If desired, soak raisins, craisins or currants in 2 tablespoons rum 15 minutes before mixing into batter to plump, refresh and add extra flavor. They can also be heated in water in the microwave for 30 seconds or so for a similar effect.


In a medium bowl, combine the dry ingredients and mix together well. Pour in the melted butter or vegetable oil; stir. Add raisins, craisins, currants (or a mixture of these). Combine all ingredients and stir together just until mixed.


Bake for 15-20 minutes. Makes 12-14 medium or 6 Texas style muffins.





CHOCOLATE CHIP COOKIES MUFFINS


1 can sweetened condensed milk


2 c. graham cracker crumbs


1 c. pecans


1 c. mini chocolate chips


Mix all ingredients together and place in muffin cups and bake in mini muffin pan for 10 minutes. If cooked too long, they will stick to the paper cups.





BLUEBERRY MUFFINS


2 cups flour


1 cup sugar


1 tablespoon baking powder


1 tsp. salt


2 eggs


1/4 cup canola oil


1/4 cup melted butter


3/4 cup milk


1 cup blueberries-fresh or frozen


Combine all dry ingredients, in separate bowl combine all wet ingredients. Fold wet into dry trying not to over mix. Fold in blueberries.


Fill muffin tins that have paper inserts or are sprayed with baking spray. Combine 1/2 cup granulated sugar with zest of one lemon. Sprinkle evenly over muffins.


Bake in 350 oven 20-25 minutes until tops are firm to the touch.





CHOCOLATE MARBLE MUFFINS


2 cups self-rising flour


1 cup sugar


half bag of chocolate chips


half bag of white chocolate chips


3 teaspoons melted butter


1 cup milk


1 egg


Preheat oven to 350掳F (180C) degrees.


Sift flour. Add sugar and chocolate chips (including white). Beat egg. Combine egg, milk and butter.


Stir until all mixed but if stirred too much it will not rise! Pour into muffin tray.


Bke for 15-20 mins. Delicious muffins that the kids will love!





CINNAMON APPLE MUFFINS


1 1/2 cups flour


3/4 cup sugar


1 1/2 t. baking powder


1 t. cinnamon


1/2 cup milk


1/3 cup butter, melted*


1 egg, slightly beaten


1 cup finely chopped apples


Heat oven to 375掳F.


Combine flour, sugar, baking powder and cinnamon in medium bowl. Add all remaining ingredients. Stir just until flour is moistened. Spoon batter into muffin liners.


Bake 18-23 minutes. Let stand 5 minutes.


* Substitute butter with Canola Oil.





STRAWBERRY BANANA CRUNCH MUFFINS


1 cup whole wheat flour


1/2 cup Kashi Golean Crunch Cereal


1/2 cup Splenda no calorie sweetener


1/2 tsp baking soda


1/2 tsp baking powder


1/4 tsp sea salt


1 large banana


1 cup strawberries


2 tablespoons applesauce


1/2 cup whole milk


录 cup eggbeaters


1 teaspoon vanilla extract


1 teaspoon ground cinnamon


Preheat oven to 350掳F.


Combine the first 6 ingredients and mix well.


Combine the rest of the ingredients in another bowl. Stir in the dry ingredients just until moistened. Spray a 12 muffin pan with nonstick cooking spray and evenly distribute the mixture.


Bake for 15 to 20 minutes or until tops are golden and toothpick inserted in center of muffin comes out clean. Each muffin has approximately 65 calories.





BANANA MUFFINS


1 cup mashed banana


1 cup white sugar


1 cup Miracle Whip


2 cups flour (whole wheat)


1 tsp baking powder


1 tsp baking soda


1/2 chopped nuts


Mix together and bake at 350 degrees for 20 minutes





ENGLISH MUFFIN PIZZA MELT


1 lg. lean ground beef


1/4 c. chopped onion


1 (8 oz.) can pizza sauce


1 tsp. dried parsley flakes


1/2 tsp. basil


1/4 tsp. garlic powder


2 tbsp. shredded Mozzarella cheese


3 English muffins, split


Non-stick vegetable spray


Preheat oven to 350 degrees. Cook beef and onion in skillet sprayed with non-stick vegetable spray. Cook until meat is no longer pink. Drain and pat dry with paper towels to reduc
