I would like to make muffins with mixed glace cherries (red, green, yellow) for my step-daugher and her friends but need a good muffin recipe as a starting point.
Also just to point out - I'm after a muffin recipe (ie - with baking powder) Not a cake recipe!

INGREDIENTS
4 1/2 teaspoons shortening
1/3 cup sugar
1 egg
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup buttermilk
1/4 cup dried cherries or cranberries, halved
DIRECTIONS
In a small mixing bowl, beat shortening and sugar. Beat in egg. Combine the flour, baking soda and salt; add to egg mixture alternately with buttermilk. Fold in cherries.
Coat muffin cups with nonstick cooking spray or line with paper liners; fill three-fourths full. Bake at 350 degrees F for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing to a wire rack.Anyone have any Cherry muffin recipes?
Choc-cherry muffins
Ingredients250g self-raising flour
1 tsp bicarbonate of soda
140g glace cherries
100g bar white chocolate , cut into chunks
100g bar dark chocolate , cut into chunks
100g golden caster sugar
2 eggs , beaten
150ml pot natural yogurt
100g butter , melted
Heat oven to 200C/fan 180C/gas 6 and line a 12-hole muffin tin with some paper cases. Sift the flour, and bicarbonate of soda into a large bowl, then stir in the cherries, chocolate and sugar. Add the beaten eggs, yogurt and then the butter and stir to combine. It doesn't matter if the mixture looks a bit lumpy, it's more important not to overmix or the muffins will turn out tough.
Fill the paper cases and bake for 20-25 mins until risen and golden brown. Transfer to a rack to cool. They are especially delicious eaten slightly warm.

YOU CAN DROP THEM IN WHOLE OR CHOP THEM IN HALF .YOU CAN EVEN BLEND THEM UP A LITTLE BUT NOT TOO MUCH .
