I would like to add fruit to them, especially raspberry and blueberry, with some cinnamon, maybe even rolled oats.I'm diabetic, and am looking for sugar free bran muffin recipes.?
Just remember that muffin is still going to have lots of carbs. Don't use white flourI'm diabetic, and am looking for sugar free bran muffin recipes.?
Here's our recipe:
SugarBabie's Make Ahead Double Bran Muffins
1 1/3 cupsprune juice
1 1/2 cups Fibre One, OR unprocessed bran
2 cupsButtermilk OR 2 cups milk + 4 tsp white vinegar
1/2 cupVegetable oil
2 whole eggs(or egg whites to make same quantity)
1 tspVanilla extract
1 TbspGround cinnamon
2 cupsWhole wheat flour
1 cupOat Bran (the type you have to cook)
1/2 cupSplenda (granular Splenda for baking)
1 TbspBaking soda
Optional flavours to add
2 TbspUnsweetened cocoa
1/2 tspPowdered ginger
1/2 cup Unsweetened coconut flakes
Heat prune juice in microwave until hot but not boiling, in a large Pyrex measuring cup. Add bran and let sit 10 minutes.
Stir in buttermilk or milk with vinegar, vegetable oil, eggs and vanilla extract.
In separate large bowl stir together cinnamon, flours, oat bran, sugar, Splenda, and baking soda.
Mix together gently and pour into container with lid, and keep in fridge for up to 2 weeks.
To use:
Medium muffins: Spray microwave muffin pan with Pam, and measure 1/4 cup of batter into each muffin cup. Microwave on high for 3 to 5 minutes or until done. Each muffin will have approximately 15 EEC (carbs minus fibre) or less. Let cool for a few minutes before removing from pan.
For mini-muffins, measure 1/8th cup of batter into mini-muffin cups, and cook on high for 3 to 4 minutes. Each mini-muffin will have about 8 carbs each, (EEC 鈥?carbs minus the fibre).
If you must add something, add raspberries or blueberries, which have less carbs than the other ingredients you mentioned.

I've had Type I diabetes for 47 years and have found that unsweetened applesauce is a good replacement for sugar.
Here's a recipe for bran muffins that use stevia, a no-carb, no calorie natural sweetener.

I stopped using Splenda and NutraSweet and other artificial sweeteners a couple of years ago as they are toxic.
Have fun!
