I'm looking for really tasty tried and true recipes that are nutritious but also tasty enough that children will eat them. And that won't leave me starving to death by 10 amAnybody have some good bran muffin recipes?
I've found many good recipes from this website, further more, there are all about healthy food and cooked in a simple, unique way.

Banana Bran Muffins with Strawberry Butter
1 2/3 cups all-purpose flour
1 teaspoon baking powder
1/2 cup butter, firm
1 teaspoon baking soda
2/3 cup natural bran
1/2 cup nuts, chopped
1 egg
2/3 cup bananas, mashed
1/2 cup plain yogurt
1/2 cup brown sugar, packed
1 tablespoon molasses
Strawberry Butter:
1/2 cup butter, softened
1/2 cup strawberry jam
Preheat oven to 375F (190C). In a large bowl, combine flour, baking powder and baking soda.
Cut in butter with pastry blender or two knives until mixture is crumbly.
Stir in bran and nuts.
In a medium bowl, lightly beat egg; stir in banana, yogurt, brown sugar and molasses.
Add to dry ingredients, all at once, stirring just until moistened.
Divide batter evenly among 12 medium greased muffin cups.
Bake 20 minutes or until toothpick inserted in centre comes out clean.
Cool 10 minutes in cups on wire racks.
Remove from cups and let cool completely.
Serve with Strawberry Butter.
Straw berry Butter: Cream together 1/2 cup (125 mL) softened butter and 1/2 cup (125 mL) strawberry jam. Makes about 1 cup (250 mL).
TIP: Add a topping treat to your muffins before you bake them. Over batter in muffin cups, sprinkle quick-cooking rolled oats, cinnamon and sugar, sesame seeds or chopped nuts.

1 1/2 cups wheat bran
1/2 teaspoon salt
1 1/4 teaspoons baking soda
6 tablespoons molasses
2 cups buttermilk
1 egg, beaten
3 tablespoons butter, melted
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease muffin pans or line with paper cups.
In a large bowl, combine all purpose flour, whole wheat flour, wheat bran, salt and baking soda. Add molasses, buttermilk, egg and butter; stir just to moisten. Scoop batter into prepared muffin pans. Cups should be 2/3 to 3/4 full.

This makes a TON of batter, but you can keep it refrigerated to 3 mos, and then just bake as many muffins fresh as you want at a time. They're lighter too; not like those heavy, moist ';door-stops';....
Raisin Bran Refrigerator Muffins
3 c. sugar
1 c. oil
4 eggs, beaten
1 quart buttermilk
5 c. flour
2 tsp. salt
5 tsp. baking soda
1 (15 oz) package Raisin Bran cereal
1 8oz. jar Apricot jam
3 c. raisins (I like white) or Craisins
Mix wet ingredients in LARGE bowl. Add dry ingredients. Mix and store in refrigerator. ( The big Tupperware wondelier bowl works well). Use as needed. Let sit overnight before using the first time ..... Fill muffin tins 2/3 full and bake at 400 for 15-20 min.
