Muffins:


3 cups all-purpose flour


1 teaspoon baking soda


1 teaspoon salt


1/2 teaspoon baking powder


1/2 teaspoon ground cinnamon


1/2 teaspoon ground nutmeg


2 cups sugar


1 cup vegetable oil


3 large eggs


1 tablespoon vanilla extract


4 ripe bananas, peeled and coarsely mashed


Frosting:


3 ounces cream cheese, room temperature


6 tablespoons (3/4 stick) unsalted butter, room temperature


1/3 cup mascarpone cheese, room temperature


3 tablespoons honey


1/2 cup chopped walnuts, toasted








Line 18 muffin cups with paper liners. Preheat the oven to 325 degrees F.


Whisk the flour, baking soda, salt, baking powder, cinnamon, and nutmeg in a medium bowl to blend. Beat the sugar, oil, eggs, and vanilla in a large bowl to blend. Stir in the banana. Add the dry ingredients and stir just until blended.





Divide the batter among the prepared muffin cups. Bake the muffins on the middle rack until the tops are golden brown and a tester inserted into the center comes out with no crumbs attached, about 25 minutes. Transfer the muffins to a rack and cool slightly. The muffins may be eaten warm or cooled completely and frosted.





To frost the cupcakes: Using an electric mixer, beat the cream cheese and butter in a large bowl until light and fluffy. Beat in the mascarpone cheese and then beat in the honey. Spread the frosting over the muffins. Sprinkle with the walnuts.

8 ounces semisweet chocolate chips


1 stick butter


1/2 teaspoon vanilla extract


1/2 cup sugar


3 tablespoons flour


1/4 teaspoon salt


4 eggs


Butter, to coat muffin tin


1 tablespoon cocoa powder


1 cup vanilla ice cream


1 teaspoon espresso powder





Preheat oven to 375 degrees.


Place a small metal bowl over a saucepan with simmering water. Melt the chocolate and butter in the bowl. Stir in vanilla.





In a large mixing bowl, combine sugar, flour and salt. Sift these into the chocolate and mix well with electric hand mixer. Add eggs one at time, fully incorporating each egg before adding the next. Beat at high until batter is creamy and lightens in color, approximately 4 minutes. Chill mixture.





Coat the top and each cup of the muffin tin with butter. Dust with the cocoa powder and shake out excess. Spoon mixture into pan using a 4-ounce scoop or ladle. Bake for 10 to 11 minutes. Outsides should be cake-like and centers should be gooey.





While muffins are in oven, melt the ice cream in a small saucepan. Stir in the espresso powder. Serve over warm muffins.Do you have any unique muffin recipes to share?
Cheddar Sausage Muffin Recipe





Prep Time: 15 minutes


Bake Time: 20 minutes





Ingredients:





2 cups of flour


3 teaspoons baking powder


2 Tablespoons sugar


1/2 teaspoon salt


1 egg


1/4 cup butter, melted


1 cup milk


1/2 cup to 3/4 cup shredded sharp cheddar cheese


8 ounces (1/2 pound) bulk pork sausage





Instructions:





Step 1: Preheat your oven to 375 degrees.





Step 2: Fry the sausage in a frying pan until cooked. Cool slightly and drain off the excess fat. Set aside and let the sausage cool.





Step 3: In a medium mixing bowl, sift together the flour, baking powder, sugar, and salt.





Step 4: In a separate bowl, beat the egg slightly. Using a whisk, mix together the egg, butter, and milk.





Step 5: Stir the wet ingredients into the dry ingredients just until moistened.





Step 6: Gently fold in the cooled sausage and shredded cheese.





Step 7: Grease a standard size muffin pan that makes 12 muffins or use paper baking cups and fill each of them 2/3 full with the batter.





Step 8: Bake the cheddar sausage muffins at 375 degrees for 18 to 22 minutes. Cool for 5 minutes before removing from the muffin pans.

banana chocolate chip muffins


prepare a banana bread recipe (box or home made)


mix in about 1 cup or so of chocolate chips or chocolate chunks pour into lined muffin tins and bake untill done


drizzle with glaze made from powdered sugar and milk





Carrot Cake muffins


make a carrot cake according to directions on box


add 1 cup of gratted carrot


1/2 cup of each of the following


-rasins


-pineapple


-chocolatechips


-dried blueberries


-dried apricotts (diced)


-chopped nuts (walnuts, pecans, almonds ect)


you can use up to 2 add in's





bake according to directions for cupcakes


frost with creamcheese iceing if desired





just take any recipe and add things to it that sound good to you have fun and be creative
LEMON BLUEBERRY SURPRISE MUFFINS





3 eggs


3 tablespoons oil


1/4 cup heavy cream


1 1/4 cups vanilla whey protein powder


2 teaspoons baking powder


1/3 cup Splenda


1/4 teaspoon cinnamon


1 tablespoon grated lemon rind


1/2 teaspoon grated orange peel


1/2 cup blueberries


3 ounces cream cheese, cut into 9 small cubes


non-stick spray or paper muffin liners





Preheat oven to 375 degrees. Line 9 muffin tins with paper liners or spray with non-stick spray. Combine the eggs, oil, and cream; stir to blend. Add the whey powder, baking powder, Splenda, cinnamon, lemon rind, and orange rind.


Stir until just combined. Do not over stir or muffins will be tough. Fold in the blueberries gently.





Spoon 1/2 the batter into the prepared muffin tins. Place a cube of cream cheese in the center of each. Fill with remaining batter, making sure batter goes completely over and around the cubes of cream cheese.





Bake at 375 degrees for 8 to 10 minutes, or until muffins spring back to the touch and no longer look moist on top. Serve warm.





Makes 9 muffins.
I got this recipe from my sister-in-law years ago. We all love it. And it's healthy!





SOUR CREAM OATMEAL MUFFINS





2 cups quick cooking oats


2 cups sour cream


2 cups flour


2 teaspoons baking powder


1 teaspoon baking soda


1/2 teaspoon salt


2/3 cup melted butter


4 eggs-slightly beaten


2 cups light brown sugar





Preheat oven to 350掳 F. Combine oats and sour cream. Stir in melted butter, eggs %26amp; brown sugar until well blended. Sift together flour, baking powder, salt and baking soda. Stir by hand into oatmeal mixture until blended. Fill cups of greased or papered muffin tins 2/3 full. Sprinkle the top of each muffin with a few oatmeal flakes and 1 tsp. sugar. Bake 17 to 20 minutes.


Makes 24 muffins.

Chili Corn Muffins





1 陆 cups white flour


陆 cup cornmeal


录 cup sugar


录 cup packed brown sugar


3 tsp baking powder


录 tsp salt


1 large egg, lightly beaten


陆 cup milk


1 can (4 oz) chopped green chilies


1 cup grated sharp cheddar or Mexican cheese blend





The first step to baking chili corn muffins with this recipe is to lightly spray with Pam 24 mini muffin cups; %26amp; then set them aside.


Then, the next step in making chili corn muffins with this recipe is in medium bowl, whisk together flour, cornmeal, both sugars, baking powder, and salt.


In small bowl, mix together egg, milk, and green chilies.


Make a well in the center of the dry ingredients.


Add milk mixture and stir until just blended.


If the batter is too stiff, add a little milk (maybe 2 tsp more).


Divide batter evenly among prepared muffin cups. Sprinkle tops with cheese.


Bake @ 400* 10 to 12 minutes, or until tops spring back when lightly pressed. Let cool in pan for 5 minutes.


To finish off your chili corn muffins, simply loosen edges and turn out on rack and cool completely.

Apricot Sunshine Muffins





12 regular or 6 Jumbo muffin tins


Pan spay


2 cups flour


3 tsp. baking powder


1/4 cup sugar


1/2 teaspoon salt


1 cup milk


1/2 cup vegetable oil


1 egg, beaten


1/2 cup finely chopped almonds


Apricot preserves





Spray muffin tins on bottom and sides with pan spray


Heat oven to 375*


In a large bowl mix flour, sugar, baking powder and salt


In separate bowl mix egg, oil and milk; beat until well blended


Add milk mixture to dry ingredients; quickly stir, but do not beat mixing only until ingredients are well blended


Fill either regular or jumbo muffin tins 1/2 full


Place rounded teaspoon of apricot preserves on the batter in the tins and top with batter until tins are 3/4 full.


Sprinkly evenly with the finely chopped almonds


Bake 20 at 375* for 20 minutes or until toothpick inserted in center of muffins comes out clean


Cool muffins in tins for 5 minutes; remove to cooling rack until thoroughly cooled





Do not overbake. Tops of muffins should be golden.

CARROT AND KALE SPICE MUFFINS








1-1/2 C organic whole wheat flour


1 tsp. each baking soda and baking powder (aluminum-free)


Salt to taste


1/2 tsp. cinnamon


1/4 tsp. nutmeg


1/8 tsp each ginger and allspice


1/3 C honey


1 organic egg


1/2 C organic sour milk or yogurt


1/3 C oil


1/2 t. vanilla


1-1/2 C grated carrots


1 C finely chopped kale or raw leafy green vegetable (in a blender is the best way to get the bits small enough to not be dissected out by your picky toddler!)


1/2 C each raisins and chopped pecans (optional)





Preheat oven to 400. In a mixing bowl, mix flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and allspice.





In another bowl, mix honey, egg, yogurt, oil, vanilla, carrots, kale, raisins, and chopped pecans .





Add to dry ingredients, stirring just till moistened. Fill greased muffin cups 2/3 full. Bake at 400 degrees for 15 minutes. Once again, sit back and enjoy watching your picky eater eat disguised vegetables.


Makes 1-1 陆 dozen

1 1/2 cups enriched self-rising flour


OR


1 1/2 cups all-purpose flour


1 1/2 tablespoons baking powder


3/4 teaspoon salt


AND


2 cups vanilla ice cream (or flavored, if you prefer), melted


3/4 cup cinnamon, chocolate or peanut butter chips, or combination





Preheat oven to 350F. Measure dry ingredients into a medium bowl; stir in ice cream just until flour is moistened. Stir in chips. Spray muffin cups with non-stick spray and fill cups 3/4 full. Bake for 20 minutes or until golden brown. Servings: 10 muffins

this would have to be the most easy to make and tastiest recipe for muffins :


into a food processor put :1 orange cut in quarters ,1 cup sugar,100 gram butter or oil ,1 egg ,quarter cup milk


.blend till mixed and no big lumps of orange left..


add 1and a half cups self raising flour ,and half teaspoon bi -carb. mix .cook in 200 oven for 15 mins.

no, but i just made a amish friendship cake and it is very good, you have something called a starter to make it . if you would like to try it , type amish friendship cake starter in your search bar there you will find the recipe for the starter and instuctions on how to make the cake. i added instant banana pudding and raisens to mine. it is REALLY GOOOOD
