Anyone know some really good muffin recipes?

A REALLY GOOD MUFFIN





2 cups flour


2 Tablespoons sugar


1/2 tsp baking soda


1/2 cup milk


pinch of salt


1/2 cup blueberries


1 mashed banana


chopped strawberries (to your liking)


a squeeze of lemon





Preheat oven to 350F degrees.


Mix all dry ingredients in large bowl. puree bananas and strwberries. Add the rest of your ingredients except bluberries, and banana-strawberry mixture. stir well. slowly fold fruit into your batter. Put in greased muffin pans for 12-20 min at 350 degrees.

Streusel-Topped Muffins





INGREDIENTS


2 cups all-purpose flour


1/2 cup white sugar


3 teaspoons baking powder


1/2 teaspoon salt


3/4 cup milk


1/3 cup vegetable oil


1 egg


1/4 cup packed brown sugar


1 tablespoon butter, softened


1/2 teaspoon ground cinnamon


1/4 cup chopped walnuts


DIRECTIONS


Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.


In a medium bowl, combine flour, 1/2 cup white sugar, baking powder and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)


Fill cups 2/3 full. In small bowl, blend 1/4 cup firmly packed brown sugar, 1 tablespoon butter (softened), 1/2 teaspoon cinnamon and 1/4 cup chopped nuts or flaked coconut with fork until crumbly. Sprinkle over muffins before baking.


Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.





Banana Muffins





INGREDIENTS


1 1/2 cups all-purpose flour


1 teaspoon baking powder


1 teaspoon baking soda


1/2 teaspoon salt


3 large bananas, mashed


3/4 cup white sugar


1 egg


1/3 cup butter, melted


DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda, and salt; set aside.


Combine bananas, sugar, egg, and melted butter in a large bowl. Fold in flour mixture, and mix until smooth. Scoop into muffin pans.


Bake in preheated oven. Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes. Muffins will spring back when lightly tapped.





Blueberry Streusel Muffins





INGREDIENTS


1/2 cup butter, softened


3/4 cup white sugar


2 eggs


1 teaspoon vanilla extract


2 cups all-purpose flour


2 teaspoons baking powder


1/2 teaspoon salt


1/2 cup milk


1 1/2 cups blueberries





2 tablespoons all-purpose flour


2 tablespoons brown sugar


1/4 teaspoon ground cinnamon


2 tablespoons butter, chilled


DIRECTIONS


Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.


In a large bowl, cream together the butter and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the vanilla. In a separate bowl, stir together 2 cups flour, baking powder, and salt.


Stir the flour mixture into egg mixture alternately with milk. Fold in blueberries. Spoon batter into prepared muffin cups. In a small bowl, mix together 2 tablespoons flour, brown sugar and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle topping over unbaked muffins.


Bake in preheated oven for 25 to 30 minutes, until a toothpick inserted into the center of a muffin comes out clean.





Easy Pumpkin Muffins





INGREDIENTS


1 (18.25 ounce) package yellow cake mix


1 (15 ounce) can pumpkin puree


1 teaspoon ground cinnamon


1/2 teaspoon ground nutmeg


1/4 teaspoon ground cloves


DIRECTIONS


Preheat the oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin pan or line with paper liners.


In a large bowl, mix together the cake mix, pumpkin puree, cinnamon, nutmeg and cloves until smooth. Spoon equal amounts of batter into the prepared muffin cups.


Bake for 20 to 25 minutes in the preheated oven, until a toothpick inserted in the center of one comes out clean.
