Looking for a blueberry muffin recipes that will please my kids (look white), but be healthier than the norm.?

High-Protien Blueberry Muffins





1/4 c Butter or margarine


1/3 c Brown sugar, packed


1 Egg


1 1/2 c Whole wheat flour


1/3 c Wheat germ


1/4 c Dry milk


1 1/2 ts Baking powder


1 c Milk


1 c Fresh/frozen blueberries


1/4 c Brown sugar, packed


1/3 c Whole wheat flour


1/2 ts Cinnamon


1/4 c Butter or margarine





Instructions:


Cream together butter and sugar. Beat in the egg.





In another bowl, combine whole wheat flour, wheat germ, dry milk and baking


powder mixing well.





Add dry ingredients alternately with milk to the butter mixture. Stir until


combined, but do not overbeat. Fold in blueberries.





Fill greased muffin pans. Sprinkle Crumb Topping over each muffin.





Bake at 400 degrees for 20 minutes. Let muffins cool a few minutes before


removing from pan.





CRUMB TOPPING: Combine 1/4 cup packed, brown sugar with 1/3 cup whole


wheat flour and 1/2 teaspoon cinnamon. Cut in 1/4 cup butter or margarine.
You can buy white flour that is whole wheat now...I think. Or try at first using 1/2 white flour and 1/2 wheat flour. The slowly keep adding more wheat. Draining the blueberries well if you use frozen will help keep a lighter color over all. Or you could use dried blueberries. I use dried cranberries in muffins all the time. You can also use fresh berries.

I've never seen a white blueberry muffin, but this one is definitely healthy!





1 1/2 cups wheat bran


1 cup nonfat milk


1/2 cup unsweetened applesauce


1 egg


2/3 cup brown sugar


1/2 teaspoon vanilla extract


1/2 cup all-purpose flour


1/2 cup whole wheat flour


1 teaspoon baking soda


1 teaspoon baking powder


1/2 teaspoon salt


1 cup blueberries





1. Preheat oven to 375. Grease muffin cups in a muffin pan or use paper muffin liners. Mix wheat bran and milk. Let stand for 10 minutes.





2. In a large mixing bowl, mix applesauce, egg, brown sugar, and vanilla. Beat in bran mixture. Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt. Stir into bran mixture until just blended. Fold in the cup of blueberries. Put mixture into muffin cups.





3. Bake for 15 to 20 minutes.





Only 123 calories and 1 gram of fat per muffin.
