Do a search for ';vegan blueberry muffins';.....(vegans don't use eggs at all, so handy for when you're out of eggs).

I'm going to assume the first one would be easiest for you. Guessing you don't have soymilk, I figure regular milk should subsitute just as well.

I don't know of any muffin recipes that don't use eggs. But what about a blueberry crisp or cobbler - just make a half recipe? I make a really yummy blueberry cream sauce that is the best with pound cake....
You can always substitute egg whites for the whole eggs in
muffin recipes.
