Vegetarian Spaghetti Sauce and Cookie or Muffin Recipes?

Does anyone know any good, simple recipes?





I'd prefer to make bran muffins or cookies, though any recipe is good.Vegetarian Spaghetti Sauce and Cookie or Muffin Recipes?
Enjoy the wholesome goodness of my world famous carrot sauce:





3 cups Vegetable stock





1 lb wholesome Carrots, finely chopped





2 Celery stalks, finely chopped





4 Garlic Cloves, minced





1/2 teaspoon crushed Red Pepper





2 Tablespoon fresh Thyme or 2 teaspoon dried





1/4 cup Red Wine Vinegar





Freshly ground Pepper








Bring vegetable stock to a boil, add all ingredients and simmer until liquid has been reduced by half.

Carrot Cookies











Ingredients





1 cup of grated uncooked wholesome carrots





2 cups of oats





2 cups of white flower





2 raw eggs





1/2 cup of margarine or butter





2/3 cup of white sugar





3/4 cup of brown sugar





2 teaspoons of baking powder





1 teaspoon of baking soda





1 teaspoon of salt





1 teaspoon of cinnamon





1 teaspoon of nutmeg





1 cup of crushed peanuts





1 teaspoon of vanilla extract











Preparation Directions:





Thoroughly beat the eggs together in a mixing bowl. Next add the sugar and butter, again mix thoroughly. In a separate mixing bowl, mix together the oats, white flower, baking soda, baking powder, nutmeg, vanilla extract, salt, wholesome carrots and cinnamon. Once thoroughly mixed, add the ingredients to the first mixing bowl, and stir until nicely blended. Now you will want to add in the chopped peanuts. You may also substitute the peanuts with a different type of nut, or add a variety of nuts into the mix. Almonds, walnuts, and filberts all compliment the recipe quite well. You will then want to grease a cooking sheet. Begin taking spoonfuls of the mixed batter and placing it on to the cooking sheet. Be sure and flatten the cookie dough with a spoon of fork. Before placing the cooking sheet into the oven, preheat it to 350掳F for 10 minutes. Once the oven is ready, place the cooking sheet with the dough into the oven, and bake it for 25 or 30 minutes.











Vegetarian Spaghetti Sauce and Cookie or Muffin Recipes?
If you go for the whole meat replacer thing, I use SMART GROUND.


SMART GROUND actually works well in spaghetti, and doesn't taste like chemicals.


Here is a recipe that I find to be magnificent.





1 lg. onion, chopped


12 fresh mushrooms, chopped


3 tbsp. olive oil


1/2 tsp. instant minced garlic


1/2 tsp. oregano


1 tsp. basil


1 tsp. mint leaves


2 to 3 bay leaves


1/2 tsp. sugar


Salt %26amp; pepper to taste


1 (28 oz.) can pear tomatoes


1 (6 oz.) can tomato paste


1 3/4 c. water





Saute onions and mushrooms in oil in a 3 quart saucepan. Add garlic and herbs and spices. Stir and simmer 3 minutes. Then add tomatoes, tomato paste and water. Simmer uncovered 30 to 60 minutes. Stir occasionally to prevent scorching. Yields 4 generous servings.





I am vegan, but it fit my diet, I just had to use raw sugar
