Perferably ones that a young child would eat!!Looking for excellent high fiber muffin recipes!?
BRAN FLAX MUFFINS





INGREDIENTS:


1 1/2 cups all-purpose flour


3/4 cup ground flax seed


3/4 cup oat bran


1 cup brown sugar


2 teaspoons baking soda


1 teaspoon baking powder


1 teaspoon salt


2 teaspoons ground cinnamon


3/4 cup skim milk


2 eggs, beaten


1 teaspoon vanilla extract


2 tablespoons vegetable oil


2 cups shredded carrots


2 apples, peeled, shredded


1/2 cup raisins


1 cup chopped mixed nuts





DIRECTIONS:


1.Preheat oven to 350 degrees F (175 degrees C). Grease muffin pan or line with paper muffin liners.





2.In a large bowl, mix together flour, flax seed, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon. Add the milk, eggs, vanilla and oil; mix until just blended. Stir in the carrots, apples, raisins and nuts. Fill prepared muffin cups 2/3 full with batter.





3.Bake at 350 F (175 degrees C) for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

I just made these muffins %26amp; they were excellent!! My whole family loved them! I substituted vanilla almond milk for the skim milk because my son can't have dairy at the moment! Report Abuse

Here are a couple you can try





HIGH FIBER BRAN MUFFINS





2 c. Nabisco 100% Bran with Oat Bran


1 1/4 c. skim milk


1 c. all-purpose flour


1/3 c. firmly packed light brown sugar


2 tsp. baking powder


1/2 tsp. baking soda


1/4 c. Fleischmann's butter, melted


1/4 c. Egg Beaters cholesterol free 99% Real Egg Product





In bowl, combine cereal and milk; let stand 5 minutes. Combine flour, sugar, baking powder, and baking soda; set aside. Mix butter and Egg Beaters into cereal mixture. Stir in flour mixture just until blended. Spoon batter into 12 greased 2 1/2 inch muffin pan cups. Bake at 400 degrees for 18 to 20 minutes. Remove from pan; cool.





PUMPKIN BRAN MUFFINS





1 1/2 c. flour


1/2 c. sugar


2 tsp. baking powder


1/2 tsp. baking soda


1/2 tsp. salt


1 tsp. cinnamon


2 egg whites


1 c. canned pumpkin


1 c. High Fiber bran cereal


3/4 c. skim milk


1/2 c. Karo light or dark corn syrup





Use cooking spray or 12 (2 1/2';) muffin cups. Combine first six ingredients. In large bowl beat egg whites with whisk. Stir in last four ingredients. Add flour mixture. Blend well. Spoon into cups. Bake at 400 degrees until firm to touch, 18 to 20 minutes. Cool in pan five minutes. Cool after removing from pan to rack. Calories 160 per muffin, Protein 4 grams, Carbohydrates 38 grams, Sodium 290 grams.
Make blueberry muffins and add flax seed to it, flax is VERY high in fiber and kids love blueberry muffins, or do chocolate muffins with flax seed in them.
Make just about any muffin recipe, but add some shredded carrot to it. Enjoy!
