i have to make banana muffins tomorrow and need a really simple banana muffin recipe with basic ingredients. and can it not be in 'cups' with the quantity thanks xDoes anyone know a really simple banana muffin recipe?
This is a really great recipe, trust me !!
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 large bananas, mashed
3/4 cup white sugar
1 egg
1/3 cup butter, melted
Makes 12.
Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda, and salt; set aside.
Combine bananas, sugar, egg, and melted butter in a large bowl. Fold in flour mixture, and mix until smooth. Scoop into muffin pans.
Bake in preheated oven. Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes. Muffins will spring back when lightly tapped.

Since you can't use the unit cups, I have converted all the cups to ounces. Hope this made it easier for you! (If you can't use ounces either, then tell me and I will try to help)
12 ounces cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
6 ounces cup white sugar
1 egg, lightly beaten
2 1/2 ounces butter, melted
2 1/2 ounces cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
Makes 10 servings

Basis Banana Muffins
Makes: 12 to 15 muffins
Total Time: 1 hr
1oz = 30grams
6oz butter
6 oz caster sugar
2 eggs, large
3 tbsp milk
3 large banana (riped, mashed)
8 oz plain flour
1tsp baking powder
1tsp bicarbonate soda
Preheat oven to 180掳C. Grease a 8 x 8 inch square tin. Beat butter %26amp; sugar together using a mixer until creamy and smooth. Add eggs, one at a time until it鈥檚 well corporated. Add milk and banana, mix well. Sift flour, baking powder %26amp; bicarbonate soda and add to mixture. Pour batter into the tin and bake for 1 hour.
The oven duration really depends on the oven. My oven took only about 40 minutes, faster if I were to use fan-assisted mode. So set your timer earlier and test the cake by inserting a toothpick. If the toothpick comes out clean or with a bit of crumbs, it鈥檚 done. Else bake a while longer, but do keep track of the time. And if you use individual cupcake cases like me, the time needed is even shorter. Perhaps, 20 to 30 minutes.
BANANA MUFFINS
1/2 c. shortening
1 c. sugar
2 eggs
1 1/3 c. bananas
2 c. flour
3 tsp. baking powder
1/2 tsp. salt
1/2 c. chopped walnuts
Muffin tin papers
Cream shortening and sugar. Add one egg at a time; beat after each is added. Stir in bananas, then stir in dry ingredients just until moist. Fill muffin tins 2/3 full. Bake 25-30 minutes at 350 degrees.
Muffins are not fating. You can make any baked good less fating by subbing All Purpose flour for Whole Wheat flour, and using egg whites instead the yolk.

I wouldnt because they are high in calories, eat carrots instead.
